Poached Ginger Chicken ( base for other recipes )

(Double or triple this recipe to have prepared chicken for the week)


  • ½ onion cut in half

  • 2cm piece fresh ginger, peeled and sliced thinly

  • 100 grams skinless chicken breast

  • Salt & pepper

Cooking Instructions:

1. Place 2 cups water in a medium saucepan. Add the onion, ginger, salt and pepper and bring just to a simmer over low heat.     Add the chicken breast, cover pan and poach until opaque throughout about 15 minutes. Remove from the liquid, let cool.

2. Discard the onion and ginger but save the broth for another dish

3. Serve chicken breast with a vegetable or reserve for other recipes
