Miso Soup
Ingredients:

1 ½ tablespoons mild yellow miso (from Asian market)

¼ red capsicum

¼ green capsicum
-
1 teaspoon grated or mined ginger

100 grams extra firm organic tofu cup into small cubes or

10 small prawns, deveined and peeled

1 green onion sliced at an angle, with some white
Cooking Instructions:
1. Add 2 cups of water to a saucepan over high heat
2. Add all the vegetables except for the tofu/prawns, miso and green onion
3. Bring to a boil for 2-3 minutes
4. Reduce heat to a simmer and add prawns/tofu and miso and simmer for 2 minutes
5. Garnish with sliced green onions

Sliced mushrooms and a handful of cherry tomatoes cut in half

Broccoli and bok choy

Add spinach at the end
