Mexican Omelette
  • 2 eggs

  • 2 tablespoons water

  • 2 tablespoons cashew or goats cheese

  • 2 tablespoons chopped green onion

  • Hot chilli sauce (sugar-free,gluten-free,additive-free)

Cooking Instructions:

1. Prepare your pan with non-stick spray

2. Place it on the stove at medium low

3. In a cup or small bowl mix eggs and water together then pour into pan 

4. Add green onions and cashe or goats cheese

5. When the eggs are almost completely cooked through – use a spatula and fold over one side

6. Let it cook for another minute. Poor hot chilli sauce on eggs to taste

Optional: " On the go scramble"
  • Mix eggs and water together in a microwave safe mug or bowl

  • Add all remaining ingredients

  • Microwave on high for 1-3 minutes depending on the machine
