Herb Crusted Tofu
  • 100 grams firm organic tofu

  • 1 melba toast crushed

  • 1 teaspoon minced parsley

  • 1 teaspoon minced basil

  • ¼ teaspoon dried thyme

  • 1 egg white

Cooking Instructions:

1. Preheat oven to 180 degrees

2. Slice the tofu into 1 cm thick pieces, then into triangles or smaller rectangles. Allow the tofu to rest on paper towels,                 changing the paper towels after a few minutes

3. In a small bowl, combine the melba toast crumbs, herbs and season with salt and pepper 

4. In a small bowl, whisk egg white. Dip each tofu piece into the egg white and then into the herbed breadcrumb mixture,               coating each side

5. Place tofu on parchment lined cookie sheet and bake for 25 minutes
