Greek Omelette
  • 2 eggs

  • 2 tablespoons water

  • 2 tablespoons crumbled goats cheese

  • ¼ cup chopped tomatoes

  • 1 small handful spinach

Cooking Instructions:

1. Prepare your pan with non-stick spray

2. Place it on the stove at medium low

3. In a cup or small bowl mix eggs and water together then pour into pan 

4. Add goats cheese, tomatoes and spinach

5. When the eggs are almost completely cooked through – use a spatula and fold over one side

6. Let it cook for another minute

Optional: "On the go scramble"
  • Mix eggs and water together in a microwave safe mug ort bowl

  • Add all remaining ingredients

  • Microwave on high for 1-3 minutes depending on the machine
