Grain-Free Paella
Ingredients:
  • 2 tsp coconut oil

  • 1 white onion - diced

  • 2-4 sun-dried tomatoes - finely chopped

  • 4-6 olives - pitted and crushed

  • 2 anchovy fillets

  • 2 cloves garlic - crushed

  • 1 tbsp chopped basil

  • 1 tbsp chopped coriander

  • 1 tsp chopped chilli or dried chilli flakes

  • 1 red capsicum - diced

  • 1 green capsicum - diced

  • 1 medium carrot - diced

  • 1 medium zucchini - diced

  • 1/4 cup sprouted beans (optional, but these have been included in the nutritional info above)

  • 1/2 cauliflower - blended until it has consistency and appearance of rice

  • 200g chicken - diced

  • 12 scallops - chopped in half

  • 6 large green prawns - peeled and chopped

  • Spanish spices (Table of Plenty - you can buy it from the supermarket)

  • Herbamere (in health food section of supermarkets)

  • Ground paprika

  • Lime to serve

Cooking Instructions:

1. Marinate the chicken, prawns and scallops in Spanish spices and 1 tsp Herbamare

2. In a wok or large pan, heat the oil and saute the onion until soft. Add the garlic, sun-dried tomatoes, olives, anchovies, basil,     coriander and chilli. Cook until soft.

3. Add the capsicum, carrot, zucchini and paprika and cook for 3-5mins just so vegetables are slightly cooked but not too soft.

 

4. Add the chicken and cook for 3 - 5 minutes until chicken is almost ready

5. Add scallops and prawns and cook until they are no longer transulcent

6. Add the cauliflower and more paprika and herbamare (if needed), cook for 1 minute. The cauliflower needs to be slightly           firm so that it feels like rice when eating it!

7. Serve with lime wedges & anchovies.
