Fruit Parfait
Ingredients:

1 cup low-fat ricotta cheese

¼ cup low fat yogurt

1 cup washed, dried berries, if large like strawberries slice

1 teaspoon grated orange zest
Instructions:
1. Puree ricotta and yogurt in food processor, stir in the orange zest
2. Reserve 4 berries for garnish. Spoon 3 tbsp. of ricotta/yogurt mixture into a dessert dish
3. Place a thick layer of berries on top. Repeat with a second layer of each
4. Top with reserved berries and garnish with a sprig of mint
