Flounder
Ingredients:
  • 100 grams flounder fillet

  • 1-4 tablespoon vegetable broth

  • 1 clove garlic, minced

  • 2 small plum tomatoes, chopped

  • Salt

  • Freshly ground black pepper

  • Parsley minced

Cooking Instructions:

1. Thaw fish is frozen. Rinse fish; pat dry with paper towels. Set aside.

2. Heat a medium sized skillet over medium heat. Ass the brother and cook the garlic and diced tomatoes. Cover and let               simmer for 5 minutes

3. Meanwhile, season the fish fillet with salt and pepper. Place on top of the simmer tomato mixture. Cover and simmer 4-6         minutes or just until the fish flakes easily when tested with a fork

4. Transfer to a plate, spooning the tomato sauce over the fish and garnish with minced parsley

Variations:
  • Add a pinch of cayenne pepper to taste
