Zucchini with Goat Cheese
Ingredients:

2 small zucchini ends trimmed and sliced on angle

¼ onion sliced thinly

1 clove garlic

2 tablespoons crumbled goats cheese
Instructions:
1. Heat a medium sauté pan over medium heat. Add 2 tablespoons of water and heat
2. Add onions and cook for 3 minutes
3. Add sliced zucchini and garlic cook for another 3-4 minutes depending on the thickness of the zucchini slices
4. Season with salt and pepper
5. Sprinkle goats cheese over the cooked zucchini and cover with lid for 3 minutes to allow the steam to melt the cheese
