Raspberry-Ginger Parfait
Ingredients:

2 cups fresh or frozen raspberries

2 slices of fresh ginger, peeled and grated

Stevia to taste

2 cups low-fat yogurt
Instructions:
1. In a medium sauce pan over medium heat, add all but ¼ cup of the raspberries, the ginger and the stevia. Cook for 5 minutes or until the berries are soft
2. Let cool. In each dessert glass, add 3 tablespoons of yogurt
3. Top with 2 tablespoons of the cooked raspberry mixture. Repeats one more layer of each and top with 3 berries on top
