Green Bean Salad
Ingredients:
  • 450g green beans, washed and trimmed

  • ½ small red onion, thinly sliced

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • ½ cup coriander chopped

  • ¼ lemon juiced

Instructions:

1. Bring large saucepan of water to boil, add green beans. Cook for 4-5 minutes until slightly tender

2. Drain the green beans and place in bowl of cold water to remove heat and prevent further cooking. Remove from water and     pat dry with paper towel

3. In a medium bowl, all the other ingredients and mix well. Add the green beans and toss. Place in the refrigerator for 1 hour.
