Cucumber Cups
Ingredients:

1 cucumber

½ red capsicum, finely diced

½ medium zucchini, finely diced

¼ cup cherry tomatoes, quartered

½ carrot shredded
-
1 clove garlic minced
-
3 tablespoons balsamic vinaigrette
-
3 tablespoons goats cheese
-
2 tablespoons parsley chopped
-
2 sprigs of parsley for garnish
Instructions:
1. Wash cucumber and with fork, strip long stripes into side of cucumber. Cut cucumber into 4cm pieces. With a spoon, scoop out part of the pulp from inside each cucumber piece being careful not to dig out bottom or sides. A melon baller works great for this Place each cucumber cup onto a plate
2. In a medium bowl, combine all the other ingredients and mix well
3. Reserve sprigs of parsley
4. Spoon veggie salad mixture into each cucumber cups and garnish with a parsley leaf Makes about 10-12 cucumber cups
