Veggie Saute
Ingredients:

1 medium shallot

4 mushrooms
-
¼ red capsicum diced small
-
2 large handfuls of fresh spinach or mustard greens

Pinch to taste cayenne pepper

Salt
-
Freshly ground pepper
-
1 tablespoon water
Instructions:
1. Have all ingredients prepped and heat medium skillet to medium high heat
2. Add mushrooms and stir frequently for 3 minutes
3. Add shallots and continue to stir for 3 minutes
4. Add red capsicum and stir for 1 minute
5. Add spinach, combine and add 1 tablespoon of water. Allow water/steam to wilt the spinach
6. Add cayenne pepper and season to taste
