Veggie Saute
Ingredients:
  • 1 medium shallot

  • 4 mushrooms

  • ¼ red capsicum diced small

  • 2 large handfuls of fresh spinach or mustard greens

  • Pinch to taste cayenne pepper

  • Salt

  • Freshly ground pepper

  • 1 tablespoon water

Instructions:

1. Have all ingredients prepped and heat medium skillet to medium high heat

2. Add mushrooms and stir frequently for 3 minutes

3. Add shallots and continue to stir for 3 minutes

4. Add red capsicum and stir for 1 minute

5. Add spinach, combine and add 1 tablespoon of water. Allow water/steam to wilt the spinach

6. Add cayenne pepper and season to taste
