Berry Granita
  • 4 cups fresh berries

  • Stevia to taste

  • ½ cup water split

  • ½ cup orange juice

  • Zest from ½ orange


1. Puree the berries with ¼ cup of water in a food processor until smooth. Strain puree through a sieve (fine mesh strainer).         Keep only the liquid

2. In a saucepan, mix stevia orange juice, orange zest and remaining1/4 cup of water, bring to the boil

3. Reduce the heat and let simmer for 5 minutes until the stevia dissolves completely. It should look like syrup and coat the           back of the spoon. 

4. Remove from heat and stir into the puree

5. Pour combined mixture into a glass loaf pan. Cover well and place in freezer overnight

6. When ready to serve, scrape the top of the frozen mixture with a spoon or fork until it flakes. Place in decorative dessert           cups and garnish with mint
