Chicken Soup

(Use the poached ginger chicken recipe)

  • ½ onion cut in half

  • 2 cm piece fresh ginger, peeled and sliced thinly

  • 100 grams skinless chicken breast half

  • Salt and pepper

Cooking Instructions:

1. Place 2 cups water in medium saucepan or skillet. Add the onion, ginger, salt and pepper and bring just to a simmer over low heat

2. Add chicken breast and poach until opaque throughout about 15 minutes. Remove from the liquid, let cool. Discard onion and ginger but save broth

3. While broth is still hot, remove cooked chicken and small dice then set aside. Add handful of chopped spinach to the broth, let wilt then season to taste, adding a touch of cayenne pepper. Add the diced chicken back to the broth
