Chicken Salad: serves 1
Ingredients:
  • 1 base poached ginger chicken recipe

  • 1 apple, small diced

  • 2 cups shredded cabbage

  • 2 tablespoons cider vinegar

  • Pinch of cayenne pepper

  • Stevia to taste

  • Salt

  • Freshly ground black pepper

Cooking Instructions:

1. Prepare poached ginger chicken recipe. Reserve broth and freeze for another recipe

2. Cut cooked chicken into small cubes and refrigerate

3. In a medium bowel, combine cider vinegarm cayenne, stevia, salt and pepper

4. Add shredded cabbage and cubed chicken and let sit 5 minutes

5. Add diced apple and mix well
