Chicken & grilled asparagus
  • 1 base poached ginger chicken recipe

  • 2 cups asparagus, washed and trimmed

  • Salt

  • Freshly ground black pepper

  • Fresh lemon juice to taste

  • 1 teaspoon minced parsley

Cooking Instructions:

1. Prepare poached ginger chicken recipe. While simmering, begin preparing asparagus

2. Fill a medium saucepan ½ way with water. Place the pan over high heat until it just begins to simmer. Add the asparagus spears. Let simmer for 4 minutes. Remove asparagus spears immediately

3. Have grill pan hot. Toss asparagus spears with salt and freshly ground pepper. Grill the spears until you have slight amount of grill marks

4. Remove chicken from poaching broth. Reserve broth and freeze for another recipe. Slice chicken breast into 6-7 slices, keep together

5. Place asparagus spears on place, going in same direction. Place sliced chicken on top of asparagus and garnish with a squeeze of fresh lemon juice, fresh lemon zest and minced parsley
