Asian Tofu Soup
Ingredients:
  • 2 cups water

  • 4 cups low sodium vegetable broth

  • 4 cloves garlic minced

  • Cayenne pepper to taste

  • 2.5 cm piece of fresh ginger, peeled and sliced thin

  • 1 cinnamon stick

  • 1 tablespoon rice vinegar

  • 6 stems of the following, washed, dried and minced

    • Basil

    • Coriander

  • 100 grams tofu, small cubes

  • 2 cups spinach torn into large pieces

  • Salt

  • Freshly ground pepper

Cooking Instructions:

1. Place first 7 ingredients into large pot and bring to a boil. Reduce heat to a simmer and cover. Let simmer for 30 minutes

2. Remove ginger and cinnamon stick

3. Add basil, coriander, tofu and spinach. Simmer for an additional 5 minutes 

4. Season to taste with salt and black pepper

Variation:
  • Replace tofu with 100 grams of cubed chicken breast and add the chicken to the broth in the beginning
